Amsterdam under the spell of Kit's sushi at The Dylan
There is currently a sensation going on in Amsterdam around 21-year-old student Kitsanin "Kit" Thanyakulsajja who runs his own "secret" restaurant as a sushi chef at hotel The Dylan in the 9 Streets. From Thursday to Sunday, Kit provides a 20-course Omakase menu for a select group of six guests. So a reservation at the restaurant, which is usually full, counts as the hottest ticket in town.
Kit became nationally known when various media like Het Parool, Vice and NRC reported on a Thai student who ran a sushi restaurant in his cramped student room in Amsterdam's Science Park where the best or most unusual sushi in town was rolled.
Home restaurant Ephemeral
Kit began his hobby project to become a better chef. His first customers were friends who brought their own drinks and came to eat 15 euro sushi with him. The story of the young sushi chef and his home restaurant soon reached beyond his friends after which sushi lovers flocked to his 20-square-meter dorm room every Friday and Saturday night for 2 years.

The Dylan
The chefs at The Dylan were so impressed with the talented chef's sushi that they offered Kit a pop-up restaurant at the hotel. A "secret" space behind a mirror in the hotel now serves as a sushi restaurant where Kit serves an intimate sushi menu for 6 guests daily from Thursday to Sunday.
